Here's a classic Caesar salad recipe that includes crisp romaine lettuce, creamy dressing, crunchy croutons, and freshly grated Parmesan cheese.
Classic Caesar Salad Recipe
Ingredients:
For the Dressing:
- 1 clove garlic, minced
- 1 teaspoon anchovy paste (or 2 anchovy fillets, finely chopped)
- 1 teaspoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon red wine vinegar
- 1/2 cup mayonnaise
- 1/4 cup olive oil
- Salt and freshly ground black pepper, to taste
- 1/4 cup Parmesan cheese, finely grated
For the Salad:
- 1 large head of romaine lettuce, chopped or torn into bite-sized pieces
- 1/2 cup Parmesan cheese, shaved or grated
- 1 cup croutons (store-bought or homemade)
Instructions:
Prepare the Dressing:
- In a medium bowl, whisk together the garlic, anchovy paste, Dijon mustard, Worcestershire sauce, lemon juice, red wine vinegar, and mayonnaise until smooth.
- Gradually whisk in the olive oil until the dressing is emulsified and creamy.
- Stir in the finely grated Parmesan cheese.
- Season with salt and pepper to taste. Set aside.
Prepare the Lettuce:
- Wash and thoroughly dry the romaine lettuce. Chop or tear into bite-sized pieces.
Assemble the Salad:
- In a large salad bowl, toss the romaine lettuce with a generous amount of the dressing until well-coated. You can add more or less dressing according to your taste.
- Add the croutons and toss again.

Tips:
- Anchovy Paste: Anchovy paste gives the dressing its signature umami flavor. If you prefer a milder taste, use less or omit it altogether.
- Croutons: For homemade croutons, cube some day-old bread, toss with olive oil, garlic powder, salt, and pepper, and bake in the oven at 375°F (190°C) for 10-15 minutes, or until golden and crispy.
- Dressing Storage: Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.
