Classic Caesar Salad Recipe

Ingredients:

For the Dressing:

  • 1 clove garlic, minced
  • 1 teaspoon anchovy paste (or 2 anchovy fillets, finely chopped)
  • 1 teaspoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon red wine vinegar
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup Parmesan cheese, finely grated

For the Salad:

  • 1 large head of romaine lettuce, chopped or torn into bite-sized pieces
  • 1/2 cup Parmesan cheese, shaved or grated
  • 1 cup croutons (store-bought or homemade)

Instructions:

  1. Prepare the Dressing:

    • In a medium bowl, whisk together the garlic, anchovy paste, Dijon mustard, Worcestershire sauce, lemon juice, red wine vinegar, and mayonnaise until smooth.
    • Gradually whisk in the olive oil until the dressing is emulsified and creamy.
    • Stir in the finely grated Parmesan cheese.
    • Season with salt and pepper to taste. Set aside.
  2. Prepare the Lettuce:

    • Wash and thoroughly dry the romaine lettuce. Chop or tear into bite-sized pieces.
  3. Assemble the Salad:

    • In a large salad bowl, toss the romaine lettuce with a generous amount of the dressing until well-coated. You can add more or less dressing according to your taste.
    • Add the croutons and toss again.
  4. Serve:

    • Transfer the salad to a serving bowl or platter.
    • Top with the shaved or grated Parmesan cheese.
    • Serve immediately, garnished with extra croutons and a sprinkle of freshly ground black pepper, if desired.

Tips:

  • Anchovy Paste: Anchovy paste gives the dressing its signature umami flavor. If you prefer a milder taste, use less or omit it altogether.
  • Croutons: For homemade croutons, cube some day-old bread, toss with olive oil, garlic powder, salt, and pepper, and bake in the oven at 375°F (190°C) for 10-15 minutes, or until golden and crispy.
  • Dressing Storage: Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.

Enjoy your classic Caesar salad!
